Referred to by esteemed chefs around the world as simply "The Spice Guy," Jing Tio is the man behind many of the distinct flavors found at restaurants like El Bulli, Eleven Madison Park and WD-50. For the past half decade, the Indonesian accountant-turned-spice purveyor has quietly set a new benchmark for quality by tracking down farmers using the best harvesting methods, ultimately leading to insanely fresh and flavorful spices.

Telling CH he "probably knows more about star anise than anybody out there," the San Francisco-based mastermind enjoys working with university professors on research around farming and harvesting. He visits new growers to check out their processes and equipment—particularly the drying and sorting machines—as a way of constantly refining his supply. Having nearly nearly reached the maximum with discovering new spices, Tio is now focused on using his extensive knowledge to create uniquely powerful blends, which he peddles to the public (along with classic ingredients) under the name See Smell Taste.

Although Tio says people are currently more interested in Southeast Asian spice blends, one he's excited about in particular is the French-inspired Indian spice called Vadouvan. Tio'sVadouvan Golden Mix is a potent fusion of onion, garlic, shallot and his special curry blend that works best as an accent seasoning. Thanks to shows like Top Chef, Tio says people are becoming more familiar with exotic spices and are experimenting more when cooking at home.

Tio's tip for at-home chefs is to "have fun with it!" He encourages creativity when cooking by diverging from specific recipes, explaining "The beauty of the spice blend is you have to smell it and use your imagination for what to use it for." If you try to hard to follow strict cooking instructions, you will never cook that dish again.

The spice blends sell online at See Smell Taste and at the Le Sanctuaire San Francisco shop in Mini, Midi and Maxi sizes at varying prices, along with single spices which you can order in bulk. You can also find them at Dean & Deluca in NYC and online at Gilt Taste.

He made his way from being a simple participant of a basic seminar to one of the top managers of the company.



His manifold activities in the area "success" and training of people of all classes to become successful, have given him the title "Ambassador of Success". Due to this position and his social activities, he knows a number of very interesting, successful and prominent people. For many years, Peter W. Kimmel, has committed himself to the UNESCO where the sales-revenues of his books are going to the children project "Kinder in Not" and the foundation "Kimmel for Kids" where revenues from seminars and donations go to support children who live in poverty or under degrading conditions.

For more than a decade he has been passing on in seminars and his books the know-how about successful power management that brought himself up to the top. At the beginning of the year 2000 Peter W. Kimmel started a series of very special seminars – made for all human senses - on the theme of "Success" in Germany which was well received and frequented by many participants. Further seminars are being prepared.

    Think Apple's retina-display MacBooks are pretty cool? Then you might like the HP Envy TouchSmart 14, Hewlett-Packard's new ultra-high-resolution laptop. Boasting a crazy-high pixel count of 3,200 x 1,800, it's 14-inch screen has even more pixels than one on the 15-inch retina MacBook Pro (2,880 x 1,800).

    The TouchSmart 14 Ultrabook isn't available yet though since it's waiting on Intel's fourth-generation Core processors, codenamed "Haswell," which should arrive sometime in the next month. HP expects to start selling the ultra-sharp Windows 8 laptop on June 26. It's unknown what the price will be, although the laptop will be available at a lower resolution (1,366 x 768) for $699 if that's any guidance. Read more...

  • Square Expands Mobile Payments Service to Japan

    Square is expanding into its first country outside North America: Japan.

    The mobile payments service announced Thursday that it is now available for use in Japan thanks to a partnership with Sumitomo Mitsui Card Corporation, a leading credit card company in the country. Merchants in Japan will be able to accept credit card payments through the Square Reader with a swipe fee of 3.25%.

    “I am honored to introduce Square to a country with a rich history of design, innovation and tradition. Square shares the same values and attention to detail in our products," Jack Dorsey, Square's CEO and cofounder, said in a statement. “I look forward to Square assisting in Japan’s continued economic growth and entrepreneurship opportunities.” Read more...

    Mailbox, the much-hyped email app for iPhone, is now available for iPad.

    Like the iPhone app, the iPad version of Mailbox lets users schedule incoming messages to read later and sort into different lists, such as "To Buy" and "To Watch," with simple gestures. In this way, the app is intended to help users perform "triage" on their inbox while on the go. Indeed, the iPad version of the app is perhaps more striking for how similar it looks to the iPhone app.

    "We wanted to create a consistency across screens. That's really been driving a lot of the design decisions," Mailbox's founder Gentry Underwood told Mashable.
